SHAUN OF THE DEAD is a maturation plot combined with a horror comedy (also a love story). That might also be of use to someone trying to combine such genres, although it is more comedy than horror.

Paddy Chayefsky's The Hospital though not a horror film is an education plot and I personally found it more terrifying than any horror film because I knew when watching that I could end up being treated in a hospital like that someday.
